and I'm so excited to be making my favorite chocolate cake.

I worked for weeks trying to perfect this cake recipe

because most chocolate cakes, if we're being honest,

they don't taste like chocolate, they're super dry,

and I wanted this one to be absolutely perfect

and I finally got it to where I want it to be.

This chocolate cake has tall, thick layers,

which I thought was really important in a chocolate cake.

I wanted it to be like fudgy and full of chocolate flavor

and brownies can do that.

So I knew this cake could do it too.

I have a couple of tips and tricks, so let's get into it.

What makes this chocolate cake the best chocolate cake,

I truly believe, is this very first step

that we're going to do, which is blooming your cocoa powder.

You've probably heard before that coffee

makes chocolate taste more like chocolate

and that is 100% true, but take that a step further.

If you let your hot coffee sit on top of your cocoa powder,

it activates it and makes it taste even more like chocolate.

First thing you're going to do is brew a hot cup of coffee

and pour that over your cocoa powder.

Let's talk about the cocoa powder in this chocolate cake

because the theme for this cake

is to make the chocolate stand out.

So I use a Dutch process cocoa powder for it,

which is a little bit darker, it's bolder,

it tastes more like chocolate.

It is also a little bit more expensive,

but I think completely worth it.

But if you want to use an unsweetened regular cocoa powder,

you definitely can.

Stir it until it's combined

and let that sit for about 10 minutes.

Your cocoa powder won't be completely smooth,

so just stir until everything is wet.

While our cocoa powder sits,

we're going to whisk together all of our wet ingredients.

So add your sugar, eggs, oil, butter, and vanilla.

Just whisk that until it's combined.

I use both oil and butter in this recipe

because butter is great for flavor,

but oil does a much better job at adding moisture in cakes.

Moisture is very important in chocolate cakes

because cocoa powder tends to dry cakes out,

so we want to add in as much moisture as we can.

And then add in that cocoa and coffee mixture

and whisk until smooth.

Next, we'll whisk together our dry ingredients.

So in your bowl, add flour, baking powder,

baking soda, and salt.

Now we can add in our dry ingredients

to our wet ingredients

and just fold that in until it is just combined.

Then add in your sour cream

and mix that until it's combined.

And sour cream is also going to add more moisture

into our cake and also gives it a little bit of a tang.

We need to line our cake pans with parchment paper.

You can do that however you prefer.

You can trace out your parchment paper,

or I like to fold it into my cake pan

and then spray it with some cooking spray

and then divide your batter evenly

These go into the oven at 350 degrees

for about 25 to 30 minutes,

just until a toothpick inserted into the middle

The frosting for this cake is absolutely wonderful,

but I do admit it's a little bit temperamental,

but no need to be scared.

and you're going to be able to get it every single time.

The important part for this frosting

is that it uses melted chocolate.

So it's very important that you let it cool back down

to room temperature

so that it's the same temperature as your butter.

If your chocolate's too hot,

it's going to melt your frosting.

The first step for our frosting

is to melt the chocolate chips

and then let them cool back down

You don't necessarily need a double boiler

Just use your microwave.

And I like to do it in just 30 second intervals

stirring after each one.

Once your chocolate is cool,

beat together the butter, powdered sugar,

cocoa powder, and just a small pinch of salt.

Beat that until it's smooth.

Then pour in your melted chocolate and beat again.

Our cakes are completely cooled,

so we are going to flip them out.

I like to take an offset spatula

and just run it along the sides of my cake first.

We are ready to frost our cakes, the best part.

So we want to trim our cake layers first

because we have a nice little dome going on

and we want to make sure they're nice and flat.

And the best part about trimming your cakes

I like to put my cake layers on a spinning cake stand

to trim the tops off

'cause it will help keep my knife nice and stable

as I trim them.

To trim the tops of your cake off,

you place your knife right on the edge,

barely insert it in.

As you rotate,

your knife is just gonna go deeper and deeper

That's how you're gonna get uneven cake layers,

To make frosting our cake much easier,

I put the platter that I want to serve my cake on

on top of our rotating cake stand

so that I can frost it while rotating it,

And then to keep our platter clean,

we're just going to place down some parchment strips,

And our cake layer will go on top there.

And then when we're done frosting,

we can just take them out and our plate will be clean.

First, we're going to add frosting on top of our cake layer

and spread that out until it's smooth.

You wanna frost all the way to the edge of your cake.

It's okay if it falls over a little bit
