A few things that can never be missed on a Christmas table are the Christmas biscuits

that are made and baked in the area. And my dad used to make them as well for the whole

family. I remember, you know, preparing literally tens of kilos of the stuff. My mom and dad

used to prepare like 30 or 40 trays of Christmas biscuits in preparation to the festivities

because that was our family Christmas presents. Along with recreating his family's festive

biscuit tradition, at this time of year Giuseppe also puts together a panettone or two. And

he's encouraging us all to do the same. It's a very simple but very effective way to put

a nice dessert on the table is to use a panettone, even, you know, the relatively modestly priced

ones that you could buy in supermarkets. You can toast them on a dry skillet and then

smother them with brandy sauce, turning them into a really nice warming pudding that is

absolutely perfect on the Christmas table. With lots of bakes being gifted between friends

and family, it's likely you might have a bit left over come January. But in Giuseppe's

house, nothing goes to waste. So you can, for example, you can use it in trifles. You

can use it, you can swap the ladyfingers in tiramisu for slices of panettone and pandoro.

But I think that you just try to, you know, stretch them as much as possible. You know,

even if you end up eating turkey sandwiches for like a couple of weeks, what's wrong with

that? I'm not complaining. The idea is to, the way I do it at home is to freeze as many

leftovers as possible. So I try not to keep them in the fridge because, you know, it's

very difficult to make sure that you're using everything in the best possible way. But if

you portion them up and you freeze them, it's my office lunch sorted for the whole of January.
