Amberlynn is off to a rough start because today Beck didn’t say no to eating outside of the house. Meanwhile, Eric is cooking a low carb meal for himself and Rickie. She uses all her daily calories on the meal then tops it off with some ice cream, claiming she’ll just not eat for the rest of the day, even though this has never worked for her in the past. They go to TJ Maxx to get some steps in and to the movies to see their own separate movies.

00:00Hey guys! Today Becky and I are actually gonna go on a date. We're gonna go see a
00:03movie but we both want to see a different movie. There's a movie that I've been
00:06wanting to see that she doesn't and then vice versa so we're just gonna like
00:10sort of like see a different movie so we're trying to figure out times and
00:14stuff and we're gonna go out to eat. I am currently just trying to stay under a
00:24calorie deficiency eating under a certain calorie limit which is 2,500
00:28currently. Anyways I'm gonna go. Hello guys! So me and Becky just got back from Walmart. I
00:35grabbed a couple things for dinner. I'm gonna do one of those recipes that I
00:37shared on Facebook. I came home and I walked into my bedroom and I seen this!
00:44Look! Oh they're so sweet, they're so precious. I just came home, they were in there,
00:49in here on the bed. I'm getting ready to make dinner. I picked up the zucchini. I'm not gonna be using
00:54any of those for the recipe tonight and then I picked up some peppers because of
00:57another recipe I saw on there. But I picked up eggplant. The majority of the stuff
01:01that we already had at the house for it but it's an eggplant parmesan bake. All you
01:05need is eggplant, basil, cherry tomatoes, mozzarella, parmesan, onions, garlic. The
01:11recipe calls for Italian breadcrumbs but I didn't want to use them. I didn't think
01:15that would probably be low carb. Marinara sauce which you only use like a
01:18little bit of it. You just mix it in there with onions once you marinate them and
01:21then the eggplant which I'll show you guys what I'm talking about and then you put a
01:24little bit in the pan. Oh and olive oil and salt and pepper. I use avocado oil
01:28instead of olive oil which we're getting low because I've been using it to cook so
01:32we'll probably have to pick up another bottle. I'll show you guys the process of
01:34what you're supposed to do. I'm getting ready to get the eggplant out and rinse it
01:38off. I'm gonna get the stickers off of it. I'm gonna go put them on Becky because she's
01:42just you know a human eggplant. I think fathers should be allowed maternity leave.

01:55Okay what you're gonna want to do is cut it and divide it down the middle.

02:28and then what you want to do is scoop out the remaining parts of the eggplant. Okay so now I'm

Yeah but it says use this part of the eggplant.

08:40And then I'm gonna add the chopped up eggplants that we used from where we hollowed it out.

08:45I unfortunately wasted I feel like a lot of the eggplant.
08:47Because I didn't know beforehand that there are seeds in them.
08:51And that you can actually use the seeds like already in there.
08:54I didn't know if you could eat them or not.
08:55So I googled is it safe to eat eggplant seeds.
08:59And it says that they are actually very healthy and beneficial to you.
09:02So it's not that big of a deal if they're in there.

09:05I just know how Ricky is about seeds and he doesn't like stuff with it.
09:08So it kind of made me a little worried and nervous.

09:11The next step was to add the pieces of eggplant that you hollowed out.
09:21I didn't know that I didn't know how to season it.

09:27Once you've let the onions soften up.
09:31And after you've cooked them for about five minutes at least.
09:35Add in the eggplant.
09:37Then the next thing you're going to want to do is after you add them in there and you mix it all up.
09:41Season it with some oregano.
09:43And then some salt.
09:49And then some pepper.
09:53So the next step was to add in your garlic.
09:56So it becomes fragrant.
09:58So it's at about 30 seconds.
10:00I think I had my heat a little too high.
10:02You can definitely smell the garlic already in it.
10:07You can smell all the other type of seasonings.
10:09So I'm going to take them off.
10:10I had it on a medium.
10:11I turned it up to a six.
10:12But apparently that was way too high.
10:14I left it on.
10:15I turned it just for like a matter of seconds.
10:16Just to cut up the tomatoes.
10:18Because you need one cup of cherry tomatoes to add to this once you have this ready.
10:23And then the next step is to add all this to a bowl.
10:30That's all been added.
10:32The next step you're going to want to do is add a cup of cherry tomatoes.
10:41It's been cut.
10:41You're going to want to add one egg lightly beaten.
10:48So you're going to want to add one and a half cups of shredded mozzarella.
10:51And then the final step for this part is going to be adding a half a cup of marinara.
11:02And then we're going to want to mix this all together.
11:09There we go.
11:10And then we are going to go add it to the boats of eggplant.
11:14But first you are going to want to add a little bit of olive oil and salt.
11:18So let me go prepare that and I'll be right back.
11:20And now we are going to add the mix.
11:21Dinner is finally done.
11:34I let it cook for 30 minutes and then I went and added a basil leaf that I bought on top of it.
