Passengers flying from London Gatwick are now the first in the world to enjoy GAIL’s before boarding, as the much-loved London brand opens its debut airport bakery in the South Terminal.
Known for its handcrafted baked goods, seasonal sandwiches and expertly brewed specialty coffee, GAIL’s brings craft baking and carefully sourced food and drinks to Gatwick’s departure lounge. The new bakery offers a wide selection of breakfast items, pastries, sandwiches, salads, sweet treats, and hot and cold made-to-order drinks – all made with the quality and care GAIL’s is known for. Senior editor Mark Dunford went to the branch to check it out, have a tour and taste test one of their products. He also caught up with Gatwick Chief Commercial Officer, Jonathan Pollard, and GAIL’s CEO Tom Molnar.

00:00So hi I'm Mark Dunford from Sussex World and I'm here today at London Gatwick Airport South
00:12Terminal and it's the first day of opening of Gale's Bakery. So it's the first ever Gale's Bakery
00:18branch in an airport. I've just arrived with a few other journalists and that just to have
00:23a little tour of the place see what it's all about have a little taste test. I have got a
00:27cinnamon and cardamom bun already so I'm gonna go and have a look at that I'm gonna
00:32have some coffee and we're gonna have a tour so let's see what it's all about.
00:41I do want to start with the seating area it is the busiest part of the entire bakery
00:47but it's also the most chill compared to the tills. Busiest and most chill. Yeah busiest and most. It's the weirdest concept but
00:55it works. It works yeah. So here is where everybody will come once they've collected their food at the
01:02moment we don't do crockery for eating in but you can still take your food over have a good time have a
01:08sit wait for your flight all flight information are just at the end here and we also have them behind the
01:13tools as well.
01:30Then we have my actual personal favorite not that I am a barista I'm not but the barista section is my
01:36favorite all of the modern coffee machines everything is very new we're still working out the kinks of
01:43everything connecting the machines to the tills but other than that the baristas have been amazing
01:48if you get a chance other than you obviously if you get a chance please try some of our coffees

02:05so i'm here at gail's bakery um ruth from the gail's bakery has just recommended
02:11the cinnamon and cardamom bun so i'm going to have a little taste test of this see what it's like
02:25oh wow
02:29get the seeds out of my mustache um really tasty the cardamom is not too overpowering
02:37lovely um lovely texture it's not it's light it's fluffy but oh so tasty and the cinnamon again
02:44and not too overbearing either just the right amount of both and really tasty so let's um see
02:49what else is on offer
02:51it's very spacious it doesn't look it now but it is the most unique one that we have across the entire
02:57guild so i love it when i first saw it it was amazing i was like oh my gosh
03:02you got plans to go to the north terminal as well you have to ask atlet
03:09i think look you have to make you know this is an experiment for us and we haven't done this
03:13before so i'd like i'd like to clearly make this work and then we consider it other places
03:18uh it is quite exciting it's big you know like i went to go talk to the team last week
03:28and there were 80 80 of us and that's that's you know that's that's a lot of a lot of people for one
03:34one place you realize you can make a significant impact yes here and so that's why we tried to make
03:40it kind of warm you know with the wood and make sure that we are you know we wanted to get messages
03:44across because you know if we're going to change the food system you know you have to talk to a lot
03:48of people a lot and this this this is the way you talk to people a lot of people go to the airport
03:55they spend a little bit of time and you can talk to them about good food great opportunity i think
04:01when we saw that we could talk to people and it was we could bake here and we could talk to people
04:05you know we can you know it is a way to get engaged
04:19we have eight tills at the front um one person per till all of our food is on display right next to
04:25the tills they come straight from the kitchen to the baker's table to the customers we also have our
04:30display of merch which you can absolutely take a look at ask any questions and i'll be happy so
04:35and then after we all look in the kitchen we all have hairnets
04:41and then yeah we can look at how everything is done for the customers
04:50things like the hats some of the coffees some of the granolas they're exclusive to
05:12yeah i'm jonathan pollard i'm a chief commercial officer here at london gatwick airport
05:21guys tremendously exciting i mean this is one i've been here five years now i don't think
05:25i can remember the level of anticipation that we've had uh from both staff and passengers we
05:30did a soft launch two days ago and there was passengers that were trying to get into the unit
05:34then when it wasn't even open so it's a tremendous day for us great to bring gales to the airport
05:39well i think this is their biggest unit in the uk it's certainly their first uh uk airport uh unit
05:53which we're tremendously excited about but it is a big space but i think as you can already see
05:57uh you know every seat is taken uh behind you uh and people are using the unit exactly as how it was
06:02designed for it's very inviting people can come in they can get their sandwich order a coffee and then of
06:08course consume it in the seating area so i've just been to gales bakery i've had the tour of the
06:12kitchen which was really interesting to see the food being freshly made freshly baked uh and i've
06:19spoken to jonathan from gatwick and tom from gales and it's obviously a really exciting proposition for
06:25both sides so uh yes gales have had got more than 180 branches across the uk for now they um look like
06:35they're going to expand more i asked if they were going to do have one of the north terminal as well
06:40as the south terminal because i know i'm flying from the north terminal soon um but they're going to
06:44see how this one goes and then see where it goes from there but there it looks like there could be more
06:49airport branches coming for gales
