04:07because of the extreme heat and humidity,
04:10which makes it a good time to grab a bargain.
04:14And with its laid-back, beachy vibe
04:17and big water sports scene,
04:19there's plenty of opportunity to call off.

04:27The Florida Keys are a wild wonder,
04:30just waiting to be explored.

05:23This archipelago of tropical islands
05:25is home to an abundance of unique and exotic creatures.
05:29turtles, dolphins, alligators, to name a few.

05:39So me and AIDS are going to go on a Florida safari.
05:43But not before we've got something to eat.
05:48All this road tripping has got me ravenous.

06:41Manatees, or sea cows, as the locals call them,
06:45are warm, water-loving, slow and gentle giants
06:49native to Florida.
06:51It's amazing, isn't it?

06:54They're huge.
06:55So big.
06:57Closely related to elephants,
06:59these aquatic mammals are legendary in these parts,
07:02and I can see why.
07:04Oh, they're so lovely.

07:08Unbelievably, these guys can hold their breath underwater
07:13for about 20 minutes,
07:15and warm water is a must for manatees.
07:18With minimal fat protection from cold water,
07:21they like water that is 60 degrees or warmer.

07:30Well, seagrass apparently hates.
07:36A single manatee might eat 100 pounds of seagrass in one day.
07:41That's around 10% of their body weight.

08:32the restaurant cooks up the usual suspects,

08:40A carnivorous fish native to the Indo-Pacific
08:43that is now an invasive species
08:46in the seas around the Florida Keys.

10:00Each Lionfish has venomous spines, and on the biggest ones,
10:05they can be several inches long.
10:09So, these spines, they're like glass needles.

10:21and take your fingernail, and you'll find there are two grooves
10:25running the length of the spine, about the thickness of a fingernail,
10:31and in each of those grooves is the gland that has the venom on it.

10:41So, really, other than that, there's nothing else to be worried about
10:44with this fish.
10:45The rest of it's just yummy goodness.

14:56The other bonus to eating lionfish, we are helping to preserve the incredible marine life here in the Florida Keys.
15:02The Florida Keys are home to North America's only coral barrier reef and more than 40 species of reef-building coral.
15:13It's alive with an abundance of sea life.
15:16Isla Mirada, a cluster of six of the Florida Keys, is known as the sporting fish capital of the world.
15:28It's in a unique location between the Bay of Florida and the Atlantic Ocean.
15:33So the marine life is some of the most diverse, which means boat trips are big business.
15:40You can join one for a snorkel or a more expensive scuba dive.

15:47Or the cheapest and driest option, which we're doing, just go along for the ride.

15:57If you look around and organise a head like we did, you can bag a boat trip for free.

16:12And beneath the surface here are some of the best coral reefs and shipwrecks in the whole of the USA.
16:18But recreational divers, Cassandra, Michael and their buddies, Marilyn and Doug,
16:25aren't just here to leisurely look at the sea life today.
16:28They're actually trying to save it.
16:33Because deep below, it's not all sunshine and smiles.
16:40The reef fish here are being invaded and eaten by lionfish.
16:45So, Cassandra, I can see why you do this, first of all.
16:52The view, the day, it's an absolutely beautiful thing to do.
16:56But, first of all, how did the lionfish even get here?
16:59They're not 100% sure, but they really think it's from the aquarium trade.
17:03You know, people put these fancy, beautiful fish in their aquariums
17:06and they don't really know much about them.
17:07So, when you have someone who doesn't know much about fish
17:10or the impact that they create on their environment,
17:12you know, they're like, oh, there's this lionfish ate all my reef fish in my tank.
17:16I'm going to throw it in the ocean, you know.
17:18So, that's how they think it came here.
17:20And they've just rapidly spread a little bit each time.
17:24And now they're found all the way up into the waterways of New York City,
17:29into the Mediterranean, and all the way down to Brazil.
17:32So, this is really vital work, what you're doing.
17:35Yes, it sure is.
17:37They're just uncontrollably repopulating.
17:40The females, they can disperse up to 30,000 to 50,000 eggs every two to three days.
17:47And they have no natural predators here, so there's nothing that's eating them.
17:51Oh, my goodness.
17:52So, we're seeing lower reef fish numbers
17:54and that's drastically impacting the health of our corals and sponges and everything.
18:00In an effort to control the explosion of lionfish in these waters,
18:06Cassandra and her crew dive down to hunt the predators.
18:10There is never going to be no more lionfish,
18:12but we can at least keep it under control
18:14by hunting them through recreational diving.
18:19The more local divers who get involved with catching the lionfish,
18:23the more effective their efforts.
18:25So, here, it's become a sport.
18:27With a big derby contest taking place each year.
18:31When we do these derbies, we're removing, you know,
18:341,500, 2,000 lionfish at a time
18:36and each time that we do it,
18:38we are seeing less numbers on the reefs that we dive,
18:41which is amazing because we are making an impact.
18:44But these predators can be hard to find.
18:47So, Michael and the team are trying to work out
18:50where the lionfish are currently lurking.
18:54So, what we're doing here today, then, we're scouting for fish.
18:57Correct.
18:57Okay, we dive these areas pretty often,
18:59but a lot of the times the lionfish are moving
19:01or other people may have come and already fished them out of an area.
19:04So, we spend today going out and checking out the reef structure,
19:07checking out some areas where we've known the fish to be before.
19:10So, excited to see what we might come across today.
19:13So, how do you communicate down there?
19:14We communicate with hand signals
19:17and so, the fish that we're going after today is lionfish.
19:21So, we give this symbol.
19:23And if you have a really big lionfish, you're going to go...

19:33Now it's the way to see what they've found.
