02:23and sealing the deal, so don't get my order wrong.
02:27Well, it is a technical challenge, it's judge-blind,

02:39For your technical challenge,
02:40Liam would like you to bring some pizzazz to the tent
02:43with his pizza pocket rockets.
02:44I love indoor fireworks.
02:47Your pizza dough must be filled
02:49with his smoky chilli paste, cheese and tomato.
02:53And to elevate this ultimate grab-and-go portable pizza snack,
02:57it must be served with a paprika aioli dip.
03:00You have one hour in which to make
03:01Liam's pizza pocket rockets.

03:10I've made pizza, but not a pizza pocket rocket.
03:13I think it's such a fun technical.
03:15The bakers have been given the same ingredients.
03:18Blender chopped tomatoes, garlic, clove, tomato puree,
03:22salt and sugar.
03:23And the simplified recipe to make Liam's pizza pocket rockets.
03:26It sounds hard, but I'm just going to try and stick to the recipe.
03:30I wouldn't say I'm a huge fan of rockets.
03:32I would probably not want to go to space
03:34because you could actually, like, get lost.
03:37That's my biggest fear.

03:51We want to test the bakers on a few elements today.
03:53Making the dough, shaping it
03:55and making those delicious, savoury fillings.

03:59to make the tomato sauce as well, Liam.

04:04The dough is wet,
04:06so just be careful how much flour you add to the dough
04:09because if it becomes too dry,
04:10it'll be tough and it won't be nice to eat.

04:15so that the filling stays inside.

14:44Okay, so we were looking for free pizza pocket rockets filled with chili paste,
14:49tomato sauce, and mozzarella, and served with paprika aioli.
14:53Some of them are pretty good.
14:54We definitely have some rockets.

15:00It's great that we have three and they look like rockets.
15:04The flavor of your tomato sauce is really good,
15:06but the base of your pocket rocket is slightly thick, ever so slightly underbaked.
15:10And the aioli has split.

15:19The rockets are really well-baked.
15:24They're really pleasant to eat.
15:25I love how much chili paste is in there.
15:27They're delicious.
15:28But the, I can't even call it aioli, it's oil and egg.
15:33I split completely.
15:36Some of them look a bit less baked on the edges than others.
15:40I would have had these rockets in the oven for, like, just an extra minute,
15:43but in terms of your flavor, it's pretty much spot on,
15:46and your aioli is good.
15:49It's come together really well.
15:50There's a really strong garlic flavor, which I really like.

15:56The rockets look very uniform in shape.
16:02I think that, actually, in some areas, they're a little bit underbaked.
16:04Just be careful how you seal your rockets,

16:09But what is there is delicious,
16:11and your aioli, in terms of texture and consistency, is smooth.
16:17In terms of baking, where the frusters are,
16:20they look slightly overbaked,
16:22and the top of your rockets look slightly underbaked.
16:25The dough is really nice.
16:26The flavor of the tomato sauce is wonderful.
16:29There was a problem with the aioli in that it's completely split.
16:34The bread itself is slightly thick.
16:37That's probably why you couldn't get three rockets.
