Pesto Parmesan Shrimp Pasta Salad!
Super simple pasta that could easily be enjoyed hot as well!
Small bag of tail off shrimp cooked in Italian dressing (Cooled)
/ pre cooked also works perfectly fine that way you wont need to cool them, just toss the shrimp in some itallian dressing and let them marinade for a bit (I recommend 20 min to 3 hours in the cooler)
Diced red onions (1)
Pesto sauce (1 jar)
Shredded Parmesan (1/3 cup)
Salt n pepper to taste
Cook pasta according to box instructions and/or preference and cool
(I just ran it under some cold water gently tossing it a few times then put it in the cooler while i prepped the other items)
From Chris: Save some of the pasta water in case the pasta is too clumpy/sticky, that way you can loosen it up.
As for the Italian dressing, I would say that less is certainly more, so I would use at least a half of a cup (or less) if that!
