chore: update valkey latest version to 6.1.0

Update valkey lockfiles and dependency package lockfiles.
This performs the following updates:

1. Some valkey lockfiles use valkey latest. This will update valkey and dependencies.
2. Some valkey lockfiles use a pinned (non-latest) version of valkey, but require the latest version of another package. This will update all such packages.
