Howdy folks, does anyone have meal recommendations for very poor time management, or for quick meals, or just for depression days?

    Go to for me and my wife - simple filling salad. Favorite greens as a base, tomato, avocado, corn when it’s in season, and chickpeas. If you have the energy you can roast the chickpeas and get them crispy, or just eat them as is out of the can (with some seasoning). Olive oil, squeeze of lemon, you’re done.

    rice with lentils in a rice cooker. You can add almost anything you want as long as its cut small. raw chicken will cook fine if you cut it small.

    • instant noodles /Ramen + frozen veggies defrosted in the micwave or pot
    • air fry chicken nuggets, fries, etc
    • toast with butter/ mayo and tomato and salt.
    • Cucumber with salt.
    • peanut butter banana sandwiches
    • eggs are easy to make
    • boil or microwave potato then add butter or oil
    • Grilled cheese
    • Sausages (bake in oven and done)
    • chips and salsa
    • crackers and cheese and kalbasa
    • cereal
    • canned soups and such. Open can. Heat. Eat.
    • frozen grapes are a great snack
    • hot dogs
    • toast with butter and cheese. Feta or marble. Any cheese
    • bread/ toas with butter and jam. And tea.
    • boil pasta, add pasta sauce. Make it fancy by heating frozen / canned veggies.
    • Rice. Option to make it by using tomato juice instead of water and some spices. Mexican rice?
    • Get rotisserie chicken from grocery store. You can now make chicken sandwiches, chicken wraps, etc. Shred it and add to pasta and an Alfredo sauce. So many options

    Bulk meal-prep on your good days and freeze it in portions for your bad days.

    I don’t have any good recipes on-hand other than the Sad Bastard Cookbook

    On my worst days i dont even cook. I eat carrots and hummus and if i have none i just don’t eat. lol

    My quick and dirty go-to meal for when I’m too tired to cook or just didn’t have time to prepare anything is Hot Dogs and Rice:

    Chop up three hot dogs, ~¼ inch per slice, and set aside. Dice a small yellow onion; melt a tablespoon of butter in a pot over medium heat and throw in the onion, sauteeing until translucent. Throw in a cup of rice and allow the rice to toast a bit. Once toasted, add 2.5 cups of chicken broth (I use Better than Bouillon, it slaps) and let it reach a boil; meanwhile, gather ¼ tsp turmeric, ¼ tsp oregano, ¼ tsp basil, ¼ tsp rosemary, ¼ tsp garlic powder, and ¼ tsp onion powder, and dump that mixture into your pot and stir a little. Once you’ve got some boilage, add your chopped up hot dogs and ½ cup frozen veggies, then put the lid on and let it simmer for 20 minutes, after which you can remove from heat and let stand (lid on) for another 10 minutes. Then grab a fork and eat! It’s quick, easy, and dirt cheap, while still being pretty yummy.

    add water. push button.

    wait.

    hear click. add tomato sauce.

    • Emergency goat cheese and crackers.
    • Soup in a can.
    • Soup from scratch. It’s kinda amazing how fast some chicken stock, canned tomato sauce, canned beans, onion, carrots and celery can come together as a hearty soup. Saute your veg, add your stock and tomato, add half the beans. Bring to a boil. Use an immersion blender to make it all thick and creamy. Add the rest of the beans. Heat, serve. 25 minutes tops.
    • Nachos, chips & cheese. Meat, beans, salsa, avocado, etc are all optional.
    • Gyoza, pan fry, deep fry, steam, whatever. Soy sauce and toasted sesame oil for dipping sauce. Chili crisp, sugar, black or rice vinegar are all optional.
    • Chicken street soft tacos. Maybe marinate or season the chicken in advance and freeze. But not essential. Pan fry the chicken, dice it up. Top with minced onion and cilantro and squeeze of lime. 12 minutes from start to finish.
    • Grilled cheese

    I like to make chili & spagetti sauce and just store them in my freezer. The only hard part is remembering to pull them out in the morning to defrost. Otherwise, just a simple grilled cheese or a fried egg sandwich is pretty easy to do with no prep.

    “Blush” sauce:
    1 brick of cream cheese
    1 jar of tomato sauce
    Ground beef if you’ve got it
    Pasta

    Brown the ground beef. Melt the cream cheese into the tomato sauce. Add the ground beef to the sauce. Put it on the pasta. Throw some veggies in if you feel up to it.

    Tomato egg stirfry. I made it last night and it’s super fast.

    4 eggs,

    4 Roma tomatoes (rough chop, big chunks)

    2 spring onions (both white and green should be sliced)

    Sauce:

    1 Tsp dark soy sauce (20ml) (double if you use coconut aminos or normal soy sauce)

    2 Tsp oyster sauce (I used hoisin and fish sauce bc I didn’t have it (price and I don’t eat shellfish) (40 ml)

    2 tbsp ketchup (I used maggi hot and sweet) (120 ml)

    Garlic powder (to taste) (you can use real garlic or jarlic)

    A few tbsp water (150ml ig)

    Cornstarch (just vibes, a tsp probably)

    Oil for eggs and sauce

    Salt and pepper (to taste, but like 3 tsp probably? I like my food a bit saltier after getting covid and I have a bit of a cold)

    Prepare rice (I used boil in a bag rice bc I didn’t feel like setting up my pressure cooker)

    Mix the sauce together. Make sure there’s no clumps with the cornstarch slurry

    Add oil to pan and heat on med high Beat eggs, add to pan, cook on medium high heat until a little bit runny (1 min at most)

    Set aside

    In the same pan, add a bit more oil and fry the the white part of the green onion until fragrant (a min for me) Add chopped tomato and add a bit of salt. Once the water comes out (a min with some stirring), add the sauce to the pan and cook until the tomsto is soft, a few min. Add the egg and cook for a min at most.

    Add salt and pepper until you like it. Make it a bit saltier bc you eat it with rice. Garnish with sliced green onion.

    This is like 2 big servings. I ate all of this myself yesterday because I was hungry. I also put fermented soybean and chili oil on mine.

    This a combination of 3 different recipes and what I had in my house/fridge. Only thing I bought is green onion. (Marissa in china, Derek Chen, and takes two eggs)

    If you time it right, your rice and stirfry can be done at the same time.

    Bagels. And a toaster oven. Don’t cut the bagel, just pop it in the toaster oven whole for about 3-4 minutes (on ‘toast’) (at least that’s what it is for ours, your oven may vary, adjust to taste).

    Warm bready goodness with basically no work and no cleanup whatsoever.
