Whacking the top of the egg right after the ice bath with like a spoon helps with peelability. I always forget to tho. But yeah, I do bring the water to a boil and set a timer for 12 minutes after it starts boiling, then immediately put into ice bath. My eggs are consistently perfect with that method.
