Any wireless headphones people would recommend?
I currently have a pair of Arctis 7Xs that I use the Xbox adapter with while dual booting windows - I’d like to find something that isn’t so finicky and works with both OSes (mostly so I can boot into Windows less…) while also working over 2.4Ghz for low latency.
Bonus points if you can also connect a phone other Bluetooth
I use Audeze Maxwell (the 1st edition), I don’t think it’s sold anymore new but there is a 2nd edition (which i never tried).
Strictly speaking I would not recommend it, unless you don’t use a mic very often - in which case it’s awesome.
The sound quality is great (although I’m no audiophile). It works fine on both Linux and Windows. The chat control is part of the headset, not the software. Comes with a 2.4ghz dongle but can connect via Bluetooth too. You can also use them wired with a usb cable while charging. Battery lasts something like 60 hours and charges in about 30 mins (as above, you can use it while charging). It’s rather comfortable, although I’ve replaced the ear pads.
I’ve mentioned the mic is the downside, the actual issue with it is that if you turn on sidetone it’ll have static crackling noises. It’s been a known issue for long and never got any fix for it. The mic can be removed or sidetone can be disabled, but since it’s a closed back you might start shouting involuntarily. If you don’t often use a mic, it’s a great headset.

I went with the super budget option and got the Nubwo (G06 I think?). I’m very very happy for the price I paid. Arctis Nova Pro Wireless appears to be the other end of the quality/price spectrum.
I use the one step down version of the Arctis Pro. Sound quality is OK being able to connect to my computer as well as my iPad at the same time is pretty sweet and I can move it over to my desktop and it works just fine which runs windows.
Any headphones that support Aptx LL will have a low latency when used with a hardware dongle. I have a pair of 1Mii E700 headphones and a 1Mii B10 dongle. The latency is barely noticeable and the dongle shows up as a sound card in Linux with no configuration needed. The headphones will connect to a phone, but will have the typical bluetooth latency.
Any recommended dongles?
It looks like the B10 dongle I used is not available anymore. I can’t seem to find any other USB dongles that support Aptx LL and Linux. There are several that plug into a headphone jack though.

Either of these would work with a Bluetooth dongle for the PC though!

I have these and have quite enjoyed them, but the switch from Windows lost the Chatmix feature, which was very handy. Also, the mute button has gotten progressively more finicky over the years. Still would recommend though.

BT dongle isn’t an option? I don’t know many options that have 2.4 and BT. Something like KDE Connect could bridge that gap with software though.
For gaming no - though I guess not also having Bluetooth isn’t a deal breaker.

”Xbox” is xbox only, PC and Playstation are the same.
They are definitely not high-end, but for my gaming needs (and occasional streaming) they work nicely. Has a wireless 2.4 USB-A dongle. Work well with my iphone and samsung tv over BT. Iphone app for config and firmware updates.
Battery isn’t the largest but should last the whole day.
A bit light and plasticy but sturdy enough that I’m not concerned about durability. Again only have used for a week but still.
I use Hyper X Cloud Flight Wireless with a USB dongle on both Windows and Linux, they worked without issue on Bazzite
No bluetooth AFAIK
