I don’t disagree with your overall point, but even before COVID I recall hearing that something like 90% of businesses fail in their first year. New restaurants struggling and going under, and existing restaurants barely eking out their existence, has pretty much always been the norm in my exp.

But yes a sudden hike in supply prices is very likely to cause a COVID-like wave of restaurant deaths as a result
