00:00If your smash burgers don't look like this, you're probably making a few simple mistakes that we can easily fix so you can start to level up your burger game.
00:05And one of the first big mistakes people make is using the wrong beef.
00:08And in my last burger tip video, I talked about why you should use 75-25 beef and that you need to avoid overworking it.
00:13But another really important tip is to make sure the beef is cold when you go to cook it.
00:16And that's really important because it helps the beef hold its shape when it's smashed, and it also gives you the best sear, which are two of the things I get asked for advice on most.
00:22And a little bonus tip, if you want to add thinly sliced onions or jalapenos, make sure those go down on top of the beef.
00:26Don't place them down first, it'll just ruin the sear on your patties.
00:29I mean, the whole point of a smashed burger is that beautiful steak-like crust that makes it so delicious.
00:33And I also get asked about what seasoning to use all the time, and my tried and true is Lauri's seasoned salt for most burgers.
00:38And the final but most controversial tip is use American cheese.
00:40For like 90% of burgers, it's hands down the best choice.
00:43And my second choice is usually Havarti cheese because it melts really well and it complements the burger without being overpowering.
