Eat (Like) the Rich: A Cookbook

Olivia Tiedemann. Ten Speed, $40 (272p) ISBN 978-0-593-83732-0

Debut author Tiedemann opens this drool-worthy and delightfully profane recipe collection by recounting her journey to becoming a private chef for a couple in the Hamptons. She strikes a brassy, decisive tone from the start, running through her “Kitchen Commandments” (including “buy quality ingredients” and “listen to your mouth”) and sorting pantry items into a “Shit or Not-Shit” list that breaks down the best brands of tomato paste and ricotta cheese (“Polly-O is straight to fucking jail”). “Bougie Breakfasts” include eggs mornay and corn bread pancakes; the appetizer chapter, titled “(Middle) Finger Foods,” features beef tartare crispy rice and “grown-up” chicken nuggets; sandwiches include chorizo butter crab rolls and the “Fuck Mayo BLT”; several gnocchi variations headline the pasta section; and grilled peach and prosciutto salad and Asian sesame slaw are among the “Salads That Don’t Suck.” Main courses are sorted by primary ingredient, with enticing chicken, meat, seafood, and vegetarian options, including seared rib eye with charred scallion chimichurri and roasted zucchini gratin. Owning that she’s not a dessert person, Tiedemann recruits her pastry chef mother to contribute a brief but mouthwatering final chapter on sweets. With flavors just as bold as the author’s personality, this is sure to be a hit. (Sept.)
