AFAIK the default one on the /e/os fp6 is fairphones own camera app. You can toggle the /e/os camera app in the settings, which is a fork of openCamera

I use an /e/os fairphone 6 and the stock camera. Hadn’t felt the need to switch to another camera app as it works fine (though I only used it to quickly snap pics and not tried to get any fancy sunrise shots etc)
